Hello everyone! Today I would like to share one of my favorite noodle called oil spill noodle. I hope you will like it.

First of all, let me tell you the general background of this noodle. The oil spill noodle is one of the traditional and characteristic wheaten food in Xian city, Shaanxi province. It stemed from the Zhou dynasty 3000 years ago. During that time, Wheat was the staple food in Northern part of the people and the oil spill noodle had already in an embryonic(雏形) state called "Li Noodles(礼面)". Through the change of dynasties, the oil spill noodle was really shaped in Qing dynasty. At that time, the chilli pepper had already popularized in China.

I love the oil spill noodle very much! We can add the green onions, chili powder, salt and other condiments with red chili oil on it. The fragrance of the noodle is out of this world and always make me enjoy the endless taste! Yummy!
